Stacey'S Favorite Orzo

  1. Heat medium saute pan over medium heat.
  2. Add butter and garlic to the pan.
  3. Stir being sure not to let the garlic burn.
  4. Add prepared peppers, mushroom and onion to the butter and garlic and saute until transparent.
  5. Bring 3 qt of water to a boil.x
  6. Add orzo and cook for 10 minutes being sure to stir to keep it from sticking together. x
  7. Wash spinach thoroughly, drain and add to sauteed vegetables.
  8. Cook until for spinach with vegetables about 5 minutes.
  9. Drain and rinse orzo and add to vegetables with beef stock.
  10. Lower heat and simmer for 5 more minutes.
  11. Place in dish and top with freshly grated parmesan.
