Smoky Venison Burgers
- 1 1/2 lb. trimmed venison chunks
- 1/2 lb. uncooked bacon
- 1 Tbsp. Worcestershire sauce
- 1 tsp. salt
- 1/2 tsp. dry mustard
- 1/2 tsp. thyme
- 1/2 tsp. black pepper
- 1 clove garlic, minced
- In a food processor, chop the venison and the bacon to medium fineness.
- In a large bowl, mix the meat with the remaining ingredients.
- Divide into 6 portions and form into patties while you prepare the grill.
- When coals are ready, toss in four soaked wood chunks.
- Position and fill the water pan.
- Position the grate and arrange patties over water pan.
- Cover grill, adjusting vent holes for outside temperature.
- After a half hour, rotate and flip the burgers.
- Cook 30 to 45 minutes longer, until desired doneness. Makes 6 servings.
