- 2 c. light brown sugar
- 3/4 c. Crisco
- 1/4 c. molasses
- 2 1/2 (3 small or 2 jumbo) eggs
- 2 tsp. vanilla extract
- 3 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 c. raisins
- 1 c. chopped walnuts
- Preheat oven to 360u0b0.
- Sift flour, baking powder, baking soda, salt and cinnamon together and set aside.
- Cream Crisco and brown sugar together then add molasses, eggs and vanilla and mix well. Mix in the dry ingredients and add the raisins and nuts.
- Shape into flattened logs (2 to a cookie sheet) and bake for 5 to 8 minutes.
- Cool slightly then cut each log to form bars.
- (To make things easier I put the dough into a large pastry bag without a decorating tip to form the logs and I cut the bars with a pizza wheel.
- I also undercook slightly to get a chewier cookie.)
