Bean Soup Or Fifteen Bean Soup

  1. Cover beans with
  2. water
  3. and soak overnight.
  4. Drain off water, place in large kettle.
  5. Cover with water and add baking powder. Boil about 15 minutes.
  6. Drain and rinse beans.
  7. (This helps in removing
  8. gastric
  9. "distress"
  10. that
  11. beans cause some individuals.) Place rinsedteans into large kettle.
  12. Add beer and 1 quart water
  13. or
  14. enough
  15. to
  16. cover.
  17. Add ham bits or ham hocks, Italian seasoning,tarrots, celery and onions.
  18. Cook 4 to 5 hours on simmer or in crock-pot on low.
  19. Top with parsley and pepper to taste.
