Purple Plum Cake Cobbler
- 1 (29 oz.) can purple plums
- 2 c. flour
- 3/4 c. sugar
- 3 Tbsp. baking powder
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/4 c. butter or oleo
- 1 c. milk
- 1 egg, beaten
- whipping cream (optional)
- 2/3 c. sugar
- Drain plums; save syrup.
- Pit plums and arrange, skin side down, in a 12 x 8 x 2-inch baking dish.
- Mix 3/4 cup sugar and cornstarch in a pan; add reserved syrup.
- Cook, stirring, until thickened.
- Pour over plums.
- Cream the oleo.
- Add 2/3 cup sugar; beat until light.
- Add egg, beaten well.
- Mix dry ingredients together; add alternately with milk to first mixture, beating until smooth.
- Spread over plums and bake at 375u0b0 for about 30 minutes.
- Serve warm with whipped cream.
