Sole Gratin
- 3 c. sliced mushrooms
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lb. sole or lean fish fillet
- 1/2 c. dry white wine
- 1/3 c. coarsely crushed zwieback cookies
- 1/4 c. sliced green onions and tops
- 3 Tbsp. snipped fresh cilantro or 1 Tbsp. dried
- 2 Tbsp. reduced-calorie margarine
- Preheat oven to 425u0b0.
- Place mushrooms in ungreased 12 x 7 1/2 x 2-inch baking dish.
- Sprinkle with 1/2 of salt and pepper. Arrange fish fillets over mushrooms; sprinkle with remaining salt and pepper.
- Pour wine around fish.
- Mix remaining ingredients and spread over top of fish.
- Bake, uncovered, until fish fillets flake easily with fork (15 to 20 minutes).
- Makes 4 servings, each containing 215 calories, 9 grams fat and 35 milligrams cholesterol.
