Framer'S Breakfast
- 1/2 c. chopped onion
- 1/2 c. butter
- 4 medium potatoes, peeled and finely chopped
- 2 tsp. water
- 12 eggs
- 4 Tbsp. milk
- 1 c. diced fully cooked ham or 1/4 c. bacon bits
- In a skillet, cook onion in butter until tender.
- Add potatoes, water and 1/2 teaspoon of salt.
- Cover and cook over medium heat for about 10 minutes or until potatoes are tender.
- Stir occasionally.
- Beat together eggs, milk, 1/2 teaspoon salt and dash of pepper; stir in ham or bacon bits.
- Pour over potato mixture. Cook, without stirring, until mixture begins to set on the bottom and around the edges.
- Use spatula to lift and fold partially covered egg mixture so the uncooked portion flows underneath. Continue cooking over medium heat for about 4 minutes or until eggs are cooked but still glossy and moist.
- Delicious!
- Serves 6 or 8.
