Italian Style Catfish
- 2 tsp. vegetable oil
- 2 green onions, sliced
- 1 garlic clove, minced
- 1/2 c. tomato juice
- 1/4 c. white wine
- 1/2 tsp. dried Italian seasoning
- 1 1/2 lb. catfish fillets
- salt and pepper to taste
- 1 Tbsp. chopped parsley
- 1/3 c. yellow cornmeal
- 2 Tbsp. vegetable oil
- 2 Tbsp. margarine
- 1/4 c. freshly shredded Parmesan cheese
- 1/8 tsp. crushed red pepper
- 1/4 c. diced tomatoes
- Heat 2 teaspoons of oil in medium saucepan; stir in onion and garlic.
- Cook over medium heat until tender.
- Stir in tomato juice, wine, Italian seasoning and crushed red peppers.
- Simmer until reduced to a thick sauce, about 7 to 8 minutes, stirring occasionally.
- Add diced tomatoes and parsley.
- Rinse catfish.
- Pat dry with paper towels.
- Season with salt and pepper.
- Coat with cornmeal.
