Tzatziki Chicken Salad

  1. Finely chop the cucumber and onion. (I like a chunky texture)
  2. Mince the garlic
  3. Combine all the ingredients and adjust the seasonings to your taste.
  4. Refrigerate over night for best flavor.
  5. Combine all the ingredients and mix with the Tzatziki, season to taste. As with all good dishes, the longer you allow the flavors to marry, the better this will be.
  6. I prefer to serve this on a bed of greens with a nice glass of Sauvignon blanc and a few friends to enjoy it with.
