Sweet Potato Casserole
- 1/2 c. brown sugar, divided
- 2/3 c. orange juice, divided
- 1/3 c. margarine, melted and divided
- 2 (1 lb.) cans sweet potatoes, drained
- 2 eggs
- 1 tsp. salt
- 1/4 tsp. cloves
- 1 tsp. ground cinnamon
- 1 c. pecans, chopped
- peeled orange slices
- marshmallows
- Combine 1/4 cup brown sugar, 2 teaspoons orange juice and 2 teaspoons butter; mix and set aside to use for glaze topping.
- Whip potatoes until smooth; beat in eggs.
- Add remaining sugar, orange juice and butter.
- Add salt, cloves and cinnamon; mix well and pour into a 1 1/2 quart casserole dish.
- Sprinkle pecans on top.
- Pour glaze topping over pecans.
- Bake at 350u0b0 for 40 minutes.
- Top with orange slices and marshmallows.
- Place under broiler until marshmallows are delicately browned.
- Yields 6 servings.
