Lima Bean Casserole
- 4 c. frozen baby lima beans
- 2 medium chopped onions
- 1 medium chopped green pepper
- 1 medium chopped red pepper (optional)
- 1 can cream of mushroom soup
- 1/2 c. water
- 1 c. sour cream
- 1 tsp. curry powder
- 1/3 c. seasoned bread crumbs
- 1 Tbsp. butter or margarine
- 2 strips crisp, cooked bacon, crumbled
- Cook baby limas as directed on package.
- Drain, saving liquid to add as part of the 1/2 cup water.
- In a saucepan, combine the onion, red and green pepper and water.
- Heat through until vegetables are tenderized.
- Blend sour cream and curry powder into the onion and pepper mixture.
- Add baby lima beans next.
- Place this mixture into a small casserole dish.
- Combine bread crumbs with 1 tablespoon melted butter and mix well.
- Fold in crumbled bacon and sprinkle this mixture on top of lima bean mixture.
- Bake at 350u0b0 for 25 minutes until topping is golden brown.
