Cherry Fudge Tarts

  1. In saucepan over medium heat, melt chocolate with condensed milk and salt.
  2. Cook and stir rapidly until very thick and bubbly, 5 to 8 minutes.
  3. Add water and egg yolks; cook and stir rapidly until thickens again.
  4. Remove from heat; add extract.
  5. Cool 15 minutes.
  6. Chill thoroughly, about 30 minutes.
  7. Stir.
  8. Fold in whipped cream.
  9. Spoon into crust.
  10. Chill 1 hour.
  11. Top with cherry filling.
  12. Refrigerate.
