The Recipe Critic'S Grilled Tuscan Pork Skewers
- 1 package Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
- 2 medium-size zucchini, sliced
- 2 medium-size yellow squash, sliced
- 2 red bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cut the pork tenderloin into 1-inch cubes. In a medium-size bowl, add the zucchini, yellow squash, red bell pepper, and red onion.
- Add the olive oil, dried herbs, salt, and pepper, and toss until coated.
- Thread the pork cubes on water-soaked skewers along with the zucchini, yellow squash, red pepper, and onion. Grill for 8 to 10 minutes until the meat is cooked all the way through (should reach an internal temperature of 145u0b0F). Remove from the grill and serve warm.
