Colorful Corn Salad

  1. In a large bowl, combine the first 12 ingredients (through cayenne pepper). In a microwave bowl, combine oil and garlic. Microwave on High for 1 minute. Cool. Whisk in lime juice. Pour over first mixture and toss to coat. Yields 16 to 18 servings. Cut in half for smaller crowd. Great with Mexican dishes.
