Latkes A La Cohn
- 4 medium Idaho potatoes
- 1 Spanish or Bermuda onion
- 3 eggs
- 1 small clove garlic, minced, or garlic powder
- 1/2 c. plain dry bread crumbs
- 1/2 tsp. baking powder
- 1 tsp. salt
- pepper to taste
- 1/4 tsp. paprika
- cooking oil
- applesauce or sour cream
- Peel potatoes and cut into chunks.
- Peel onion and cut into small pieces.
- Break one egg into blender; add potatoes and onion. Blend until smooth.
- Empty into a colander to get rid of some of the liquid, then pour into a large bowl.
- Add remaining two eggs, garlic, bread crumbs, baking powder and salt.
- (Taste batter or first pancake to test for salt.)
- Add pepper and paprika.
- Stir well.
- The batter should be thick enough so that it will hold its shape and won't run off a tablespoon.
- If not, add more bread crumbs.
