Crisp Peanut Butter Cookies
- 1 c. margarine, softened
- 1 c. sugar
- 2 eggs, beaten
- 2 1/2 c. sifted flour
- 1 tsp. baking soda
- 1 c. creamy or chunky peanut butter
- 1 c. firmly packed brown sugar
- 1 tsp. vanilla extract
- 1 tsp. baking powder
- 1 tsp. salt
- Cream margarine, peanut butter and sugars together in bowl. Mix in eggs and vanilla.
- Sift flour, baking powder, baking soda and salt together over margarine mixture.
- Stir until well blended.
- Refrigerate dough until well chilled.
- Preheat oven to 350u0b0.
- Form dough into 1-inch balls.
- Place about 2 inches apart on greased cookie sheet.
- Flatten with floured bottom of glass or with floured fork.
- Bake for 12 to 15 minutes or until lightly browned.
