Cranberry Delight Salad
- 1 (20 oz.) can crushed pineapple, juice drained and reserved
- 1 c. water
- 1 can whole cranberry sauce
- 3 Tbsp. lemon juice or 3 Tbsp. orange juice concentrate
- 1 tsp. grated lemon or orange peel
- 1/2 tsp. nutmeg
- 2 c. nonfat sour cream (16 oz.)
- 1/2 c. chopped nuts
- 1 (6 oz.) pkg. strawberry jello
- Combine pineapple juice and water in a 2-quart saucepan; heat to boiling.
- Remove from heat; add gelatin and stir until completely dissolved.
- Stir in cranberry sauce, lemon juice, lemon peel and nutmeg.
- Chill until mixture thickens slightly.
- Add sour cream; stir until thoroughly combined.
- Fold in pineapple and nuts.
- Pour into an 8-cup mold or serving dish.
- Chill until firm. Keeps well.
- Serves 12 to 15.
