Buffalo Chicken Sandwiches & Ranch
- Buffalo Chicken
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 garlic cloves, minced
- 1/2 cup Frank's red hot sauce
- 2 tablespoons butter
- 4-6 Rolls (or sandwich bread)
- 1 tomato, sliced
- 1 bunch green onions, finely chopped
- Romaine lettuce
- Ranch Dressing
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup buttermilk
- 1/2 lemon, juiced
- 1 garlic clove, minced
- 1 teaspoon Mrs. Dash onion & herb
- 1 teaspoon garlic powder
- 1 teaspoon basil
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- Heat a skillet over medium heat, and add olive oil and chicken.
- Sprinkle the chicken with spices and minced garlic.
- Cook for about 4 minutes on each side, or until chicken is done.
- Add butter and Frank's to the pan and cook until butter is melted and sauce is bubbling. Transfer to a covered dish.
- Combine all ingredients in a small bowl and mix well.
- To assemble sandwiches, spread ranch on one side of the bread and top with green onions, then chicken, tomatoes, and lettuce.
