Crabmeat Au Gratin Bites

  1. Dice the peppers and scallions and put in a mixing bowl, adding the mayonaise, sour cream, tabasco, dill, and garlic powder.
  2. Check the crabmeat for big shell pieces and sprinkle with fresh lemon juice, squeezing it all over the surface. Toss the crabmeat into the bowl of mayo etc. Use forks to lift the crab and fold loosely in the mayo.
  3. Add the monterey jack cheese to the mayo and crabmeat, toss again lightly
  4. Beat the egg or egg white and pour it over the crabmeat, folding loosely
  5. Break or cut apart the english muffin halves and arrange on a cookie sheet cut side up, in rows. Spoon even amounts of crabmeat over the surface, until the bowl is empty. It should be a little chunky. Sprinkle the grated cheeses over the top, and cook in your oven like you are making a tuna melt. I preheat my convection oven to 400. A standard oven temp, would be 425.
  6. Bake until bubbly, about 15 minutes before you want to serve them. Using a pizza cutter, wheel through the middle of the english muffin halves, making an X, creating 4 pieces from one muffin half. These triangles are easy to pick up, and if you have used the proportions I give here, usually are not so messy that you can't pick them up and eat them with your fingers.
