Chicken Croquettes
- 1/4 c. butter or margarine
- 6 Tbsp. flour
- 2 c. chicken stock
- 3 c. chopped, cooked chicken
- 3 c. cooked rice
- 2 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 1 tsp. onion powder
- 3/4 tsp. celery salt
- 1 Tbsp. chopped parsley
- 1/2 tsp. pepper
- 1 crushed bouillon cube
- 1/4 tsp. marjoram
- Melt butter or margarine; add flour and blend to a paste.
- Stir in heated stock and cook, stirring until sauce is thickened.
- Cool. Combine remaining ingredients.
- Add sauce to chicken mixture; mix and chill.
- Shape into croquettes.
- Dip croquettes in milk or beaten egg; roll in bread crumbs.
- Place croquettes in greased pan. Bake at 400u0b0 for about 30 minutes.
