Sixty Minute Whole Grain French Bread

  1. In a large bowl, dissolve yeast and sugar in water and let sit for 5 minutes.
  2. Stir in whole wheat flour with wooden spoon and blend well.
  3. Add salt and stir again.
  4. Gradually mix in white flour, half a cup at a time, until the dough loses its wet look and becomes a floury, shaggy mass.
  5. Preheat oven to 425u0b0.
  6. After flouring your hands, remove dough from bowl and knead for a minute or two, until dough firms up.
  7. Lightly oil one large or two small French bread pans or a cookie sheet.
  8. Shape the dough into one or two baguettes or a boule (ball) and place in pans or on sheet.
