Mexicali Pork Chops(Microwave)
- 2 pork loin chops, cut 3/4-inch thick (about 1 lb. total)
- 1/2 c. tomato sauce
- 1/2 c. cooked whole kernel corn
- 1/4 c. canned whole green chili peppers, rinsed, seeded and chopped
- 1/4 tsp. sugar
- 1/2 small onion, thinly sliced and separated into rings
- fresh jalapeno peppers (optional)
- Trim separable fat from pork chops; sprinkle with salt. In an 8
- x 8 x 2-inch baking dish, arrange chops with meatiest portions facing
- the
- outside
- of the dish.
- Cover with vented microwave-safe plastic
- wrap.
- Cook
- on
- 30%
- power (medium to low) for
- 10
- minutes. Turn chops over.
- Rotate dish, one-half turn; cook for 10 to 12 minutes more or until chops are tender and no pink
- remains.
- Transfer
- to a serving platter and keep warm.
