Fettucini With Sausage, Red Pepper And Mushrooms
- 1 lb. hot Italian sausage
- 4 Tbsp. olive oil
- 1 medium onion, halved and cut in 1/4-inch slices
- 3 red bell peppers, cut in 1/4-inch strips
- 12 oz. mushrooms, thinly sliced
- 2 cloves garlic, chopped
- 2 c. heavy cream
- 1 lb. fettucini noodles (homemade preferred)
- 1 1/2 c. grated Parmesan cheese
- salt and pepper to taste
- Remove casing from the sausage; break into very small pieces. In large skillet, cook sausage 5 to 7 minutes or until brown. Remove sausage from pan; drain.
- Heat olive oil in skillet; add onion.
- Cook until translucent.
- Lower heat; add red peppers, mushrooms and garlic.
- Cook 7 to 9 minutes or until peppers and mushrooms are tender.
- Add sausage to this mixture and cook together on low heat 3 minutes.
- Remove from heat.
