Cherry Lime Rickey
- 1/2 cup sugar
- 1/2 cup water
- 7 limes, juiced (or at least 1/2 cup)
- 5 tablespoons cherry syrup (from maraschino cherry jar)
- 1 & 1/2 liters seltzer water (I prefer to use orange-flavored, but plain is fine)
- ice cubes
- maraschino cherries, limes or orange slices for garnish (optional)
- MAKE THE SIMPLE SYRUP: In a small pot, pour in the water and sugar and stir together over medium heat, until the sugar is dissolved. Let the syrup simmer on the heat for about 5-7 minutes, and then turn off the heat and transfer it to a bowl. Add in the lime juice and maraschino cherry syrup, and stir to combine thoroughly. Cover the bowl with plastic wrap, and refrigerate the syrup for 30-minutes to an hour.
- When the cherry-lime syrup has cooled, pour it into a punch bowl or large serving pitcher (or however you'd like to serve it).
- To the cherry-lime syrup, add in the fruit garnish (if you choose to include it) and seltzer water. Stir to combine.
- Serve in ice-filled glasses, and enjoy!
