Very Light Yeast Rolls
- 1 pkg. dry yeast
- 1/2 c. warm water
- 1/3 c. nonfat powdered skim milk
- 3 Tbsp. sugar
- 1 tsp. salt
- 1 1/2 c. water
- 7 c. bread flour
- 1 egg
- 3 Tbsp. light margarine
- Mix yeast and 1/2 cup warm (not hot) water.
- Set aside to dissolve about 5 minutes.
- Then mix the sugar, salt, powdered milk and 1 1/2 cups water.
- Heat at low on top of stove to dissolve sugar and salt, about 5 minutes.
- Allow to get warm boiling hot then add margarine to milk mixture.
- (Allow the margarine to melt in milk mixture.)
- In a large bowl add 4 cups flour, yeast and milk mixture; then add slightly beaten egg.
- Mix well, it will feel elastic.
- Then add remaining flour, 1 cup at a time, mixing well after each addition.
- Cover bowl and keep in warm area.
- Allow dough to double in size, about 1 1/2 to 2 hours.
- Then knead dough on well floured area.
- Divide into 3 equal parts.
- Roll out about 1/2-inch thick and cut rolls with cutter or roll in a small ball and spray baking sheet with nonstick cooking spray.
- Cover and let rise until double in size; then, in a hot 400u0b0 oven, bake 15 to 20 minutes or until golden brown.
- Remove from oven and brush with butter immediately.
