Cape Cod Pasta Strudel (Lasagna)
- 1 lb. sweet or hot Italian sausage (5 links)
- 1/2 lb. ground beef
- 1/2 c. finely chopped onion
- 2 cloves garlic, crushed
- 2 Tbsp. sugar
- 1 Tbsp. salt
- 1 1/2 tsp. dried basil leaves
- 1 (15 oz.) container cottage cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. fennel seed
- 1/4 c. dried parsley
- 4 c. canned tomatoes, undrained
- 2 (6 oz.) cans tomato paste
- 1/2 tsp. salt
- 12 curly lasagna noodles
- 1 egg (hard-boiled)
- 3/4 c. Mozzarella cheese, thinly sliced
- 1 (3 oz.) jar Parmesan cheese
- Peel sausage and cut up into large saucepan.
- Brown sausage and beef together; add onion and garlic.
- Stir until well browned. Add sugar, salt, basil, fennel seed, pepper and half of parsley. Mix and add tomatoes, tomato paste (mash up) and 1/2 cup water. Bring to boil and simmer for 1 1/2 hours, stirring a bit.
