Chicken Cordon Blue
- 4 whole chicken breasts, split, boned and skinned
- 8 (1 oz.) slices ham
- 8 (1 oz.) slices Swiss cheese
- 3 Tbsp. parsley
- 1/4 tsp. pepper
- 1 egg, beaten
- 1/2 c. Italian bread crumbs
- 1/4 c. mayonnaise
- 10 3/4 oz. can mushroom soup
- 8 oz. sour cream
- Place each breast half on sheet of wax paper.
- Flatten to 1/4-inch thickness, using meat mallet or rolling pin.
- Place one slice of ham and one slice of Swiss cheese in center of each piece.
- Sprinkle evenly with parsley and pepper.
- Roll lengthwise and secure with toothpick.
- Dip each chicken breast in egg.
- Coat with bread crumbs.
- Melt butter in heavy skillet.
- Brown chicken to 12 x 8 x 2-inch pan, reserving drippings in skillet.
- Add remaining ingredients to drippings and stir.
- Pour sauce over chicken.
- Bake, uncovered, at 350u0b0 for 40 to 45 minutes.
