Apple Blondies
- 1 c. butter or margarine, softened
- 2 c. packed dark brown sugar
- 4 eggs
- 2 tsp. vanilla
- 1 1/2 c. flour
- 1/2 tsp. ground ginger
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 large firm apples (Golden Delicious or Granny Smith)
- 1/2 c. chopped walnuts
- 1 c. semi-sweet chocolate chips
- Preheat oven to 350u0b0.
- Grease and lightly flour 9 x 13-inch pan.
- Combine butter and sugar in large bowl of electric mixer. Beat on low speed until well combined, about 2 minutes.
- Beat in eggs, one at a time, until very creamy.
- Stir in vanilla.
- Sift flour, ginger, cinnamon and nutmeg together onto a sheet of waxed paper.
- Sift again.
- Add flour mixture into butter mixture. Combine on low speed.
- Core apples; don't peel.
- Coarsely chop. Fold apples into batter with walnuts and chocolate chips.
- Put into pan.
- Bake 30 minutes.
- Cool and cut.
