Gluten Free Chicken & Waffles

  1. Preheat oven to 400 degrees.
  2. Wash, dry, and flatten chicken breasts.
  3. Brush chicken breasts with olive oil and coat with Beanitos breading.
  4. Spray broiler pan with cooking spray and place coated chicken breasts onto pan.
  5. Bake on broiler pan for about 30-35 minutes.
  6. Preheat waffle iron.
  7. In a medium bowl, whisk egg yolks and milk.
  8. Add almond flour and salt. Combine until smooth.
  9. Add melted coconut oil.
  10. Whisk egg whites until they form moist, stiff peaks.
  11. Fold egg whites into batter a little at a time.
  12. Add maple syrup and vanilla. Mix well.
  13. Scoop 1/3 c. of batter onto preheated and greased waffle iron. Close gently.
  14. Cook until golden brown.
  15. Enjoy!
