Southern Chocolate-Mint Brownies With Mint Cream Frosting

  1. Beat eggs lightly with wire whisk in a large bowl.
  2. Add sugar and stir well.
  3. Combine flour and cocoa; gradually stir into egg mixture.
  4. Stir in 1 cup butter and flavorings.
  5. Pour into a greased 15 x 10 x 1-inch jellyroll pan; bake at 350u0b0 for 15 to 18 minutes or until wooden toothpick inserted in center comes out clean.
  6. Cool in pan on a wire rack.
  7. Spread Mint Cream Frosting over brownie layer; freeze 15 minutes.
  8. Melt chocolate squares and 3 tablespoons butter in saucepan over low heat, stirring until melted.
  9. Spread over frosting.
