Greek Spinach-Cheese Pie
- 2 lb. fresh spinach
- 1/2 c. minced white onion
- 1 Tbsp. olive oil
- 1 1/2 Tbsp. chopped dill
- 2 dashes of nutmeg
- salt and pepper to taste
- 1 c. cottage or Ricotta cheese
- 1/3 lb. crumbled Feta cheese
- 2 eggs, beaten
- 1 1/2 c. wheat germ
- 1 1/2 Tbsp. melted butter
- 1 small onion, chopped
- Chop spinach.
- Saute minced onion in olive oil until transparent.
- Add spinach; cover and cook until most of moisture evaporates.
- Remove from heat; add dill, nutmeg, salt, pepper, cottage cheese, Feta cheese, chopped onion and eggs.
- Mix well. Combine wheat germ and melted butter.
- Press into bottom and sides of large, flat baking dish.
- Pour cheese-spinach mixture into dish, spreading evenly.
- Bake in preheated 350u0b0 oven for 45 minutes or until crisp and brown.
- Slice to serve.
