Applesauce Drop Cookies
- 2 c. sifted all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 c. margarine
- 1/2 c. brown sugar, packed
- 1 c. rolled oats
- 1/2 c. chopped nuts
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 c. sugar
- 1 c. applesauce
- 1/2 c. seedless raisins
- 1/2 c. semi-sweet chocolate bits
- Heat oven to 375u0b0.
- Sift together flour, baking soda, salt, cinnamon and nutmeg; set aside.
- In the large bowl of an electric mixer, using the "cream" setting, beat butter and gradually add the sugars.
- Beat until light and fluffy.
- Add egg and beat until blended.
- Reduce speed to low and add the applesauce and sifted dry ingredients.
- Beat just until all ingredients are blended together, using a rubber spatula to scrape down the sides.
- Remove from the mixer and stir in the oats, raisins, nuts and chocolate. Drop dough by tablespoonfuls onto ungreased cookie sheets about 1 inch apart.
- Bake 8 minutes; remove from cookie sheets to cool. Makes 5 dozen.
