Australian Fish(Servings: 4)
- 1/2 lb. fresh mushrooms
- 2 Tbsp. butter
- 1 Tbsp. oil
- 1/2 c. Parmesan, Cheddar or Cheshire
- 1 1/2 lb. fillet of sole or any white fish
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 Tbsp. green pepper, chopped
- 6 Tbsp. white wine
- 2 tsp. fresh lemon juice
- 1 Tbsp. fresh parsley, chopped
- Melt butter in skillet over low heat.
- Add mushrooms and saute over medium heat until tender.
- Rub oil over shallow 4-quart baking dish and sprinkle with grated cheese.
- Place fish on cheese.
- Sprinkle fish with salt and pepper.
- Add onions and top with mushrooms.
- Pour wine over fillets.
- Bake at 450u0b0 for 20 minutes or until fish flakes.
- Sprinkle with lemon juice and parsley.
