Famous Wesson Oil Fruit Cake
- 1 c. Wesson oil
- 1 1/2 c. brown sugar
- 4 eggs
- 3 c. sifted all-purpose flour
- 1 c. thinly sliced citron
- 1 1/2 c. whole candied cherries
- 1 c. candied pineapple
- 1 c. chopped figs
- 1 c. seedless raisins
- 3 c. nuts
- 1 tsp. baking powder
- 2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. allspice
- 1 tsp. cloves
- 1 c. orange juice
- Heat oven to 275u0b0.
- Line pans with lightly greased brown paper.
- Combine oil, sugar and eggs.
- Beat 2 minutes in large bowl.
- Combine 1 cup of flour with nuts and fruits.
- Sift remaining flour with baking powder, salt and spices.
- Stir into Wesson oil mixture alternately with orange juice.
- Pour batter over fruit mixture; blend well.
- Turn into prepared pans.
- Place a pan of water on lower oven rack.
- Bake cake 2 1/2 to 3 hours or until done.
- Cool on wire racks.
- Remove from pans; peel off paper.
