Beef Mexican Soup
- 1 lb. ground beef or turkey
- 1 chopped onion
- 1/4 c. chopped green pepper
- 1 box beefy Hamburger Helper
- 5 c. water
- 1 can Mexican style chili beans
- 1/2 tsp. garlic salt
- 1/4 tsp. chili powder
- 1/4 tsp. salt
- 1/4 tsp. cayenne pepper
- 1 (16 oz.) can chopped tomatoes
- 1 (16 oz.) bag frozen corn
- 1 (4 oz.) can sliced black olives
- 1 c. chopped frozen okra (optional)
- Cook beef or turkey, onion and pepper until browned.
- Drain off fat if beef is used.
- Stir in sauce mix from Hamburger Helper, water, seasonings and tomatoes with liquid.
- Heat to boiling, stirring constantly.
- Reduce heat, cover and simmer 10 minutes. Stir in macaroni, corn, beans and okra.
- Stir in olives with liquid.
- Cover and cook 10 more minutes.
- (May substitute two 14 1/2 ounce cans chopped tomatoes with liquid and 4 cups water for one 16 ounce can tomatoes and 5 cups water.)
