Asian Bulgur Wheat Salad
- Bulgur Salad
- 3/4 cup Bulgur wheat
- 2 cups Water
- 1 cup Cucumber, peeled and diced
- 1 Tomato, finely chopped
- 1 Bunch green onions, sliced thin
- 1/2 cup Fresh cilantro, finely chopped
- 1 teaspoon Salt
- Dressing
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 3 tablespoons Soy sauce
- 1 tablespoon Ginger paste, or freshly grated ginger
- 1 Garlic clove, minced
- Pour 2 cups of boiling water over the bulgur wheat, and let it sit for 30 minutes.
- Strain off any excess water after 30 minutes.
- Combine bulgur wheat with other salad ingredients and mix well.
- Whisk the dressing ingredients together and pour over the salad.
- Mix well and refrigerate for at least one hour.
- Serve with pita bread.
