Low Calorie Ambrosia
- 3 envelopes unflavored gelatin
- 1 c. orange juice
- 1/4 c. sugar
- 1 c. boiling water
- 1/4 c. lemon juice
- 1 tsp. grated lemon peel
- 1 tsp. grated orange peel
- 1 can mandarin oranges, drained
- 6 egg whites (at room temperature)
- dash of salt
- Sprinkle gelatin over orange juice.
- Let stand 5 minutes. Bring to a boil.
- Remove from heat.
- Add 2 tablespoons sugar and the 1 cup boiling water.
- Stir until sugar is dissolved.
- Pour into bowl.
- Add lemon juice, lemon peel, orange juice and orange peel.
- Set bowl in ice to chill, stirring occasionally, until thick as egg whites.
- Beat egg whites and salt until foamy.
- Add rest of sugar.
- Beat gelatin.
- Fold all together.
- Chill for 3 hours.
