Luncheon Quesadillas With Fruit Salsa
- Salsa
- 1 11 oz can Mandarin oranges
- 1 tablespoon fresh cilantro
- 1 tablespoon lime juice
- 2 pinches cayenne pepper (optional)
- Quesadilla filling + tortillas
- 3/4 cup shredded colby-jack or cheddar cheese
- 1/4 cup feta cheese, crumbled
- 2/3 cup pitted dates, chopped fine
- 1/4 pound thinly sliced deli smoked chicken, diced
- 2 tablespoons green onion, sliced thin
- 1 teaspoon ground cumin
- 4 8-inch wheat or white flour tortillas
- Drain oranges well, chop fine
- Chop cilantro
- In small bowl, combine oranges, cilantro, lime juice, and cayenne.
- Pre-heat oven to 375.
- In medium bowl, combine the cheeses, chicken, dates, onions, and cumin.
- Place two tortillas on large baking sheet.
- Sprinkle half the filling on each tortilla, leaving 1/2 inch around the edge.
- Dampen the outer edges with a little water. Top with the other two tortillas, and press to seal.
- Bake 8 minutes (or until hot). Cut into 6 wedges each.
- Drain salsa, and serve over or on the side. Enjoy!
- This is a footnote, not a step. If you are using commercially packaged smoked deli chicken, it will usually have some added water. A quick flash in the micro between paper towels will solve this. Also, leftover roast chicken breast works great, too.
