Baked Chicken Sandwiches
- 16 slices white bread
- 1 stick margarine
- 1/4 lb. fresh mushrooms
- 2 c. diced cooked chicken
- 3 chopped hard-boiled eggs
- 1/3 c. sliced black olives
- 3/4 c. mayonnaise
- 2 Tbsp. onion, chopped
- 1 can cream of chicken soup
- 1 c. sour cream
- 2 Tbsp. sherry
- paprika
- Trim crust off bread and butter each side.
- Place 8 slices of bread in 9 x 13-inch pan.
- Saute mushrooms in 2 tablespoons butter.
- Cover bread with mixture of mushrooms, chicken, eggs, olives, mayonnaise and onions.
- Arrange remaining 8 slices of bread on top.
- Combine soup, sour cream and sherry; pour over sandwich.
- Sprinkle with paprika.
- Bake at 325u0b0 for 30 minutes.
