Shrimply Cauliflower
- 1 large head cauliflower, chopped
- 2 c. milk
- 1 onion, minced
- 1/2 tsp. dill
- 1/4 c. flour
- 1/4 c. melted margarine
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 2 c. chopped, cooked shrimp
- 3/4 c. shredded medium-sharp Cheddar cheese
- Combine cauliflower with a small amount of water in a glass dish.
- Microwave on High for 6 to 7 minutes or until tender; drain.
- Place in a 9 x 11-inch baking dish.
- Combine milk, onion and dill in a small saucepan.
- Bring to a boil.
- Remove from heat and strain; keep warm.
- Blend flour and margarine in a saucepan. Cook for 1 to 2 minutes, or until smooth but not brown.
- Stir in warm milk gradually.
- Cook over low heat until thickened and smooth, stirring constantly.
- Season with salt and white pepper. Stir in shrimp.
- Spoon over cauliflower; top with cheese.
- Bake at 325u0b0 for 30 minutes.
