Potato Soup

  1. Cook bacon and keep grease.
  2. Cook onion in grease until clear. Remove onion.
  3. Gradually add flour, stirring constantly to avoid lumps.
  4. Cook until golden brown.
  5. Add chicken stock and stir with a whisk.
  6. Turn heat to low, add potatoes, bacon, cream and spices. Simmer 10 minutes.
  7. Add cheese and onion.
  8. Stir until melted. Add hot sauce to taste.
