Sugarless Chewy Coconut Bars

  1. Place margarine in a 2-quart glass bowl.
  2. Microwave on High 1 minute or until melted.
  3. Beat in eggs until light and fluffy.
  4. Add 18 packets sugar substitute, maple flavoring, flour, baking powder and vanilla.
  5. Blend thoroughly.
  6. Stir in nuts, raisins and coconut.
  7. Pour batter into an 8-inch square baking dish.
  8. Rotating midway through cooking, microwave on High 6 to 8 minutes or until done when tested.
  9. Sprinkle with 1 packet of sugar substitute and top with cherry slices.
  10. Let cool completely before cutting. Makes 25 bars, 85 calories each.
  11. Diabetic exchange:
  12. 1 fat, 1/2 starch.
