Sugarless Chewy Coconut Bars
- 1/2 c. reduced-calorie margarine
- 2 eggs
- 19 packets sugar substitute
- 1/4 tsp. maple flavoring
- 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- 1/2 c. chopped walnuts
- 1/2 c. raisins
- 1 c. flaked coconut
- 5 maraschino cherries, sliced
- Place margarine in a 2-quart glass bowl.
- Microwave on High 1 minute or until melted.
- Beat in eggs until light and fluffy.
- Add 18 packets sugar substitute, maple flavoring, flour, baking powder and vanilla.
- Blend thoroughly.
- Stir in nuts, raisins and coconut.
- Pour batter into an 8-inch square baking dish.
- Rotating midway through cooking, microwave on High 6 to 8 minutes or until done when tested.
- Sprinkle with 1 packet of sugar substitute and top with cherry slices.
- Let cool completely before cutting. Makes 25 bars, 85 calories each.

- 1 fat, 1/2 starch.
