Mandarin Orange-Sweet Potato Casserole

  1. Boil potatoes and set aside.
  2. Combine sugar, cornstarch, lite salt and cinnamon in saucepan.
  3. Add apricot nectar and orange peel.
  4. Bring to a boil, stirring constantly.
  5. Remove from heat. Stir in butter.
  6. Pour sauce over sliced, peeled potatoes and mandarin oranges that have been placed in a casserole dish (9 x 13-inch) sprayed with nonfat cooking spray.
  7. Sprinkle Grape-Nuts on top.
  8. Bake at 350u0b0 for 25 minutes.
