Mandarin Orange-Sweet Potato Casserole
- 3 to 4 lb. sweet potatoes
- 1 c. packed brown sugar
- 1 1/2 Tbsp. cornstarch
- 1/4 tsp. lite salt
- 1 1/2 tsp. ground cinnamon
- 1 c. apricot nectar
- 2 tsp. grated orange peel
- 2 Tbsp. butter
- 1/2 c. Grape-Nuts cereal
- 2 (8 oz.) cans mandarin oranges, drained
- Boil potatoes and set aside.
- Combine sugar, cornstarch, lite salt and cinnamon in saucepan.
- Add apricot nectar and orange peel.
- Bring to a boil, stirring constantly.
- Remove from heat. Stir in butter.
- Pour sauce over sliced, peeled potatoes and mandarin oranges that have been placed in a casserole dish (9 x 13-inch) sprayed with nonfat cooking spray.
- Sprinkle Grape-Nuts on top.
- Bake at 350u0b0 for 25 minutes.
