Whole Wheat Banana Nut Bread
- 1/4 c. plus Tbsp. butter or margarine, softened
- 3/4 c. firmly packed dark brown sugar
- 2 eggs
- 1 1/2 c. whole wheat flour
- 2 tsp. baking soda
- 1 tsp. salt
- 3 Tbsp. buttermilk
- 2 c. mashed ripe banana
- 1 c. chopped pecans
- Cream butter; gradually add sugar, beating well.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.
- Stir in banana and pecans.
- Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 1 hour and 10 minutes or until a wooden pick comes out clean.
- Cool in pan 5 minutes. Remove to a wire rack and cool completely.
