Cornflake Cookies
- 1 1/2 c. butter or margarine, softened
- 1 c. sugar
- 1 c. firmly packed brown sugar
- 3 large eggs
- 2 Tbsp. hot water
- 1 1/2 tsp. vanilla extract
- 2 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. soda
- 1/4 tsp. salt
- 2 c. quick-cooking oats (uncooked)
- 2 c. cornflake cereal
- 1 c. flaked coconut
- 1 c. chopped pecans
- Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well.
- Add eggs, one at a time, beating after each addition.
- Stir in water and vanilla. Combine flour and next 3 ingredients; add to butter mixture, mixing well.
- Stir in oats and remaining ingredients.
- Drop batter by tablespoonfuls onto lightly greased cookie sheets.
- Bake at 350u0b0 for 12 to 14 minutes.
- Transfer cookies to wire racks to cool.
- Yield:
- 8 dozen.
