Aunt Florie'S Oatmeal Cake
- 1 1/2 c. boiling water
- 3/4 c. dry oatmeal (quick-cooking kind)
- 1 c. sugar (granulated)
- 1 c. brown sugar
- 1/2 lb. butter (2 sticks)
- 2 c. flour
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 4 Tbsp. egg mix or 2 eggs
- 1 tsp. baking soda
- Preheat oven to 350u0b0.
- Put the oatmeal in a medium bowl.
- Pour boiling water on the oatmeal and let stand while preparing the rest of the ingredients.
- Cream butter and sugars (brown and granulated) until fluffy.
- Sift the dry ingredients (flour and cinnamon), then add them to the butter and sugar mixture.
- Pour in the vanilla and the oatmeal.
- Stir until well blended.
- Pour into 2 (9-inch) layer pans or one 12 x 9 x 2-inch utility pan.
- Bake in the oven for 30 minutes or until done.
