Pineapple Chicken

  1. Preheat oven to 425u0b0.
  2. In a large shallow baking pan, melt margarine with oil in the oven.
  3. Remove pan.
  4. Combine flour, salt, paprika and pepper in a plastic bag.
  5. Piece by piece, coat chicken by shaking it in the bag with the seasoned flour.
  6. Arrange floured chicken in baking pan in one layer.
  7. Bake at 425u0b0 for 20 minutes. Turn chicken.
  8. Combine pineapple, green pepper, green onions, brown sugar and sherry; pour over chicken.
  9. Lower heat to 375u0b0; bake until chicken is golden brown and sauce is thick (45 minutes).
  10. Serves 8.
  11. Enjoy.
