Breakfast Salad
- 4 Eggs
- i bunches Kale , spinach or lettuce of your choice
- 1 Avocado
- 6 ounces Turkey bacon cooked & crumbled
- 1/2 Sliced cucumber
- 2 ounces Crumbled feta or Goat cheese
- Handful Shredded carrot
- Simply toss all your vegetables together . You may add or subtract to your preference . Cook turkey bacon or sub shredded chicken or turkey leftovers .. Scramble eggs in non stick pan with just a coating of Olive oil brand of your choice . Be sure and season eggs . I love Trader Joes lemon pepper seasoning .
- Arrange scrambled eggs on salad portioning two plates . Top with sliced avocado, turkey & crumbled cheese . A squeeze of fresh lemon juice with 2 tablespoons olive oil is fine for dressing .
- The great thing about this salad us you can add or subtract to your liking . Fresh herbs, scallions etc . I like to add a dollop of siracha hot sauce !
