Tomato-Basil Soup
- 1/2 pkg Chopped Spinach, chopped again
- 1 1/2 T olive oil
- 1 can diced tomatoes (or 3 fresh, chopped)
- 1 can Campbell's tomato soup
- 1 28 oz. Can crushed tomatoes
- 1 6 oz. Can tomato paste
- 1/2 C half & half
- 1/4 C dried tomatoes in oil, chopped
- 1/3 C sour cream
- milk - 2 soup cans full
- 1/4 t fresh ground black pepper
- 1 t dried parsley
- 1 1/2 t dried basil
- 1/4 t onion powder
- 3/4 C grated Parmesan
- 1 T sugar
- 2 T real dairy butter
- Saut spinach in olive oil about 3 - 5 minutes. Add rest of ingredients & bring to simmer. If you can't find 28 oz. can crushed tomatoes, get diced and run through blender.
