Healthier Chocolate Chip Zucchini Muffins

  1. Preheat oven 350 degrees
  2. Prepare a muffin tin by spraying with nonstick cooking spray
  3. In a large bowl, mix together dry ingredients except chocolate chips
  4. In a food processor, mix together zucchini and wet ingredients
  5. Add wet ingredients to dry ingredients until combined well
  6. Add chocolate chips & mix into batter
  7. Add batter to muffin tin
  8. Bake 20 minutes or until a toothpick can be slid out of the muffin clean
  9. Allow to cool 10 minutes in the muffin tin before removing & enjoying
